Senarian egg broth

It’s good to know that when a renegade Trill enters your station and wants to kidnap one of your crew members, at least they can offer nourishing soups while they’re doing this (DS9: Invasive Procedures). In this case, this Senarian egg broth was offered to Chief O’Brien to help ease his pain after he was caught in some crossfire. 

This is a fairly bland, nourishing version of the classic egg drop soup. Of course you can add more ingredients as you want, but I was trying to keep it simple - something you’d give an invalid to keep their strength up. You can make this have a more Asian feel by using soy sauce, ginger, spring onions and star anise, or more European by using parsley, garlic and cloves - the choice is yours. The recipe below is for one cup only, so make sure you increase the recipe if serving more than one person.

(Makes 1 cup)

1 cup / 250ml / 8.4 fl oz chicken stock
1 egg
1 1/2 teaspoons cornstarch
Parsley, spring onions or other herbs for a garnish
Spices for the soup: suggest garlic, ginger, star anise, cloves
Salt or soy sauce to taste

Put the stock in a saucepan and heat gently. Add the soup spices (you can use a tea ball or a cloth parcel to keep them all together) and bring to the boil, then simmer for about 10 minutes, until the flavours have infused. Remove your soup spices. Taste your soup and add soy sauce or salt as needed. 

In a small bowl, add 1 teaspoon of cornstarch. Take 3-4 tablespoons of the soup and add it to the bowl with the cornstarch, and mix the two together until you get a thick slurry. Pour the slurry back into the soup, stirring so it is combined, then simmer for a further 2-3 minutes until it begins to thicken. Reduce the heat so the soup is kept warm, but is barely simmering. 

Crack your egg into a small bowl and beat lightly with a fork. Add the remaining (1/2 teaspoon) of cornstarch to the eggs and whisk in. Hold your fork over the saucepan, and pour the eggs over the fork and into the broth. Stir the soup gently with your fork, and allow it to stand for a couple of minutes to finish cooking the eggs. 

Serve in a soup mug, and garnish with parsley or spring onions. Dream of life as a trill.
